Autumn break in a holiday home: Go mushroom hunting in nature

Autumn is mushroom season – and if you’re staying in a holiday home, it’s almost a must to head into the forest with a basket and knife. We’ve gathered a guide on how to get started, where to look, and how to make the most of your foraging finds.

Asserbo Plantation

In North Zealand, you’ll find Asserbo Plantation, where chanterelles, porcini, russulas, and boletes grow between moss and heather. Alongside the mushrooms, you may also come across herbs that make perfect companions in the pan.

Close to the plantation, Sophie and Kristian own a holiday home where you can retreat after a day outdoors. Back in their charming retro kitchen, you can pan-fry your mushrooms in butter with the herbs you’ve gathered – the best way to preserve their pure, earthy flavour. If you’d like to discover more lovely houses in Asserbo Plantage, you can find them here.

Mushroom foraging

An app for a successful forage

If you’re new to mushroom hunting, the names and species might feel overwhelming. Luckily, there’s an app to make things easier: Svampeatlas. Simply snap a photo of your find, and the app will suggest what kind of mushroom you’re holding. But remember – never eat anything you’re unsure about. When in doubt, leave it out.

Mols Bjerge

Planning a holiday to Mols Bjerge? Then you can be almost certain to find mushrooms in abundance. Golden chanterelles are especially common here. The national park is already known for its spectacular landscapes, and in the wooded areas you’ll discover a wealth of fungi.

Remember good foraging etiquette: leave some behind for the next wanderer – and for the animals too. After all, badgers enjoy mushrooms just as much as we do.

In the more open meadows, you’ll be less likely to find fungi, but there’s plenty else to experience – buzzing insects, grazing animals, and the rhythms of autumn.

At the heart of Mols Bjerge, Nanna and her family’s holiday home puts you right in the middle of it all. After your foraging trip, warm up with a homemade chanterelle risotto – a dish that tastes like autumn comfort in a bowl. Mols Bjerge is a wonderful holiday home area with many hidden gems. Mushrooms

Basket and knife

Foraging doesn’t require much equipment, but a few essentials will make the experience easier. First, a good mushroom knife – preferably one with a brush at the handle to clean off soil before you head home. Next, a proper basket. Mushrooms take up more space than you’d think, and it won't take long before the basket is filled.

It’s also handy to bring an app or a reliable mushroom guidebook with illustrations, so you can double-check your finds on the go.

Fanø Plantation

Fanø Plantation is another hotspot for edible fungi. Here you’ll come across chanterelles, russulas, boletes, and milk caps, all thriving in the shelter of the pine trees.

After your forest walk, retreat to Maiken’s thatched holiday home by the Wadden Sea. Cook your harvest in the kitchen, warm up by the woodburning stove, or treat yourself to a sauna session to shake off the autumn chill. Discover more holiday home gems on Fanø here.

Chantarelles

A word of caution

Not all mushrooms are safe to eat. Some are deadly poisonous, including the death cap, destroying angel, fly agaric, and Satan’s bolete. If you’re in the slightest doubt, don’t take chances – leave the mushroom behind. Better still, go with an experienced forager to ensure you only bring home the good ones.
