Nina from sanketure.dk shares her favorite recipe for rosehip syrup
One of my favorite summer flowers is the rosehip, which grows in many summer cottage areas. You can make a fantastic syrup out of it.
Nina’s Recipe for Rosehip Syrup:
- Combine equal parts water and sugar and bring the mixture to a boil.
- Add 2 generous handfuls of rosehip petals and squeeze the juice from 1 lemon while the mixture is boiling. The lemon draws out the color and makes the syrup truly beautiful.
The result is a bright pink syrup that smells and tastes like roses—but in a pleasant way that isn’t overly perfumed. Nina likes to pour it into sparkling water, add it to cocktails, or drizzle it over pancakes.
Nina runs Sanketure.dk, and she recommends going out to pick rose hips from the bush when it’s in bloom, since the plant is invasive.
