Autumn season ingredients you can use to make delicious holiday home dishes
When you go to a holiday home, you have the season's ingredients right outside your door. It could be small berries in the forest or the local farm shop that has local produce on its shelves. We have created a guide on where to look and what dishes to make on your holiday home trip.
Find your vitamin boost along the Danish coasts
In autumn, forests and roadsides are bursting with berries that you can turn into jelly, jam, juice, and syrup. If you are near the beach, there is also a good chance you will come across sea buckthorn.
Sea buckthorn contains vitamins A, B, C, and E, all of which are important for your health. The fantastic thing about sea buckthorn is that you can eat them raw and use them in cooking. For example, you can make a delicious sea buckthorn jam for your morning rolls at the holiday home. Making jam doesn't have to take more than 20 minutes, so you still have plenty of time to enjoy with your loved ones, without spending several hours in the kitchen during your holiday home trip. The great thing about jam is that it can last a very long time. So you can easily take your homemade jam home with you as a memory of the trip.
Delicacies of the sea at Limfjorden

Although many wave a wistful farewell to the summer's warmth as the autumn months approach, autumn also means a reunion with the sea's oysters, which can be collected as early as September. Limfjorden, in particular, is known for its Danish oysters, which are said to taste wonderful.
Catching oysters doesn't require much equipment, just sensible clothing and possibly a pair of waders if the water is knee-deep. Then you need a bucket to store your catch and possibly an oyster knife if you want to taste your oysters when they are freshest – right by the coast. Oysters can be eaten as they are or you can spice them up with seasonal ingredients such as a little dill and fresh onions. Only your imagination sets the limits when it comes to preparing oysters.
However, it is always important to investigate whether the area where you want to collect oysters is safe. If it's your first time going oyster hunting, it might be a good idea to team up with an experienced oyster collector or go on a guided tour.
Discover wild mushrooms in autumn
The forest floor is teeming with mushrooms as soon as autumn arrives. Therefore, it's an obvious choice to go mushroom hunting during your holiday home trip. Asserbo Plantage is one of many places in Denmark where you can find a great bounty of mushrooms. You might be lucky enough to find chanterelles, oyster mushrooms, and trumpet chanterelles on the forest floor. Take them home and make a mushroom stew that can simmer for a couple of hours. You can also make mushroom toast for lunch or breakfast. To make mushroom toast, you need good cream, which you pour over your fried mushrooms. When your stew has become nice and creamy, spread it evenly over a delicious sourdough bread from the local baker. Voila.

Shop seasonally with the locals

At Birkemosegård near Sjællands Odde, you can buy seasonal ingredients, as the farm sells its harvest from its own fields. For example, you can buy potatoes and make a crispy potato pizza. Spread mascarpone on your pizza dough, slice your potatoes ultra-thin and place them on top, then top the pizza with bacon from the local butcher or some delicious herbs from the forest. At Birkemosegård, you can also order a Thursday box with fresh ingredients. A smart hack is to plan your holiday home trip to Sjællands Odde so that you can pick up such a box. Then you truly have the opportunity to cook with seasonal ingredients without having to hunt for them yourself.
Spice up your food with forest herbs
You don't always have to rush to the nearest grocer for fresh herbs. Sometimes they can be found right outside your door and are ready to be thrown directly into the holiday home pots.
You can always find nettles all year round, which can be used as an herb in food or as a main ingredient in a warm soup. You can also find wood sorrel all year round, which can be used in salads, hot dishes, or as a topping. However, be careful not to eat too much wood sorrel, as it has a high content of oxalic acid.
